We may not be able to cook for you in the Taproom but our Head Chef Shaun has still been beavering away in his kitchen creating all kinds of delicious delights. First up is a classic baked cheesecake with a WBB twist. It includes Good Old Boy caramel!


Good Old Boy Baked Cheesecake

Servings: One cheesecake, no one’s judging your portion sizes here…



3 eggs, lightly beaten

400g cream cheese, room temp

150g icing sugar

200g frozen berries, thawed

Good Old Boy Caramel (see below)


100g unsalted butter, chilled & chopped

200g plain flour

80ml milk

Good Old Boy Caramel:

500ml bottle Good Old Boy + 2 tbsp sugar +2 tbsp honey. Add all into pan and reduce down slowly.



Start with the pastry.

  1. Rub butter & flour together until you have something that resembles breadcrumbs.
  2. Stir in a pinch of salt.
  3. Use a butter knife to cut in milk 1 tbsp at a time until combined.
  4. Cover and chill for 30 mins.
  5. Preheat oven to 200 degrees C.
  6. Roll out pastry on floured work surface to 0.5mm thick and use to line base & sides of a 20cm x 5cm-deep round springform cake pan.
  7. Chill for 10 minutes.
  8. Line with baking paper and fill with pastry weights.
  9. Bake for 15 minutes then remove weights & paper, bake for a further 8-10 minutes.
  10. Reduce oven to 160 degrees C.
  11. Whiz cream cheese. eggs, sugar and Good Old Boy caramel in a food processor until combined (about 1 minute).
  12. Pour over base and add berries.
  13. Place pan on baking tray and bake for 1 hour until cheesecake is cooked through but not too brown.
  14. Serve hot or cold.
