You could prepare this beforehand to save time on the day or even freeze it for up to 1 month. Mister Swift Gravy

Servings: 1.5 Litres

Preparation time: 10 minutes

Cooking time: 2 hours 10 minutes

Total time: 2 hours 20 minutes

 

Ingredients:

4 large carrots

1 large onion

1kg of chicken wings

8 rashers of smoked bacon

4 thyme sprigs

4 rosemary sprigs

3x star anise

5x whole cloves

1 tbsp vegetable oil

1x 500ml bottle Mister Swift 3.8% Pale Ale

2 litres chicken stock

4 tbsp plain flour

 

METHOD

  1. Put the oven on at 180 degrees celcius
  2. Chop carrots & onions into wedges and put into roasting tray or casserole dish
  3. Sprinkle oil over the veg and mix together
  4. Add thyme, rosemary, star anise and cloves
  5. Lay the chicken and bacon over the top and roast for 45 minutes
  6. After 45 minutes add a bottle of Mister Swift and put back into the oven until reduced by a third
  7. Add flour and mix well, let cook out for 5 minutes and then place on hob on a low heat
  8. Add chicken stock and let simmer for 1 hour
  9. Strain well & serve
